Pastry Chef de Partie, CIBC Square, Toronto, ON Employment Status: Full-Time Starting Hourly Rate: $24.00 per hour Address: 81 Bay Street Toronto ON M5J 1E6 New Hire Schedule: 5am Baking Job Summary You will be responsible for running the pastry operations by creating, planning and supervising the daily production of top-quality pastries, desserts and baked goods. Responsibilities Supervise the daily production and distribution of all pastries, desserts and baked goods. Ensure recipes and standards are followed, food costs are controlled, and appropriate quantities are prepared based on established production needs. Ensure proper food handling, presentation, portion control and maintenance of proper serving temperatures. Monitor and control the maintenance and sanitation of the pastry kitchen and equipment to ensure a work environment that meets/exceeds federal, provincial and corporate standards and regulations. Supervise hourly kitchen/pastry associates, including interviewing, scheduling, payroll, training, counseling, participating in reviews and recommending disciplinary action, as appropriate. Help plan and implement seasonal menus. Order and maintain pastry supplies and products to ensure appropriate inventory levels. Qualifications Proven experience as Pastry Chef, baker or in a relevant role. Valid Food Handler Certificate or provincial equivalent. Post-secondary education in culinary or related studies. Great attention to detail and creativity. Great organization and leadership skills. In-depth knowledge of sanitation principles, food preparation and baking techniques and nutrition. Working knowledge of baking with ingredient limitations (pastries that are gluten free, sugarless etc.). Certificate in culinary arts, pastry-making, baking or in a relevant field.
