Join our commitment to providing exceptional food service to the best of business and industry.Job SummaryHow you will make an impact: You will be responsible for running the pastry operations by creating, planning and supervising the daily production of top-quality pastries, desserts and baked goodsAs a Pastry Chef de Partie, you will:Supervise the daily production and distribution of all pastries, desserts and baked goodsEnsure recipes and standards are followed, food costs are controlled, and appropriate quantity is prepared based on established production needsEnsure proper food handling, presentation, portion control and maintenance of proper serving temperaturesMonitor and control the maintenance and sanitation of the pastry kitchen and equipment to ensure a work environment that meets/exceeds federal, provincial and corporate standards and regulationsSupervise hourly kitchen/pastry associates, including interviewing, scheduling, payroll, training, counseling, participating in reviews and recommending disciplinary action, as appropriateHelp plan and implement seasonal menusOrder and maintain pastry supplies and products to ensure appropriate inventory levelsAbout you:Proven experience as Pastry Chef, baker or in a relevant roleYou must have a valid Food Handler Certificate or provincial equivalentPost-secondary education in culinary or related studiesGreat attention to detail and creativityGreat organization and leadership skillsIn depth knowledge of sanitation principles, food preparation and baking techniques and nutritionWorking knowledge of baking with ingredient limitations (pastries that are gluten free, sugarless etc.)Certificate in culinary arts, pastry-making, baking or in a relevant fieldCompass Group Canada is committed to nurturing a diverse workforce representative of the communities within which we operate.
