Purpose & Position presentation:
The Red Seal Chef will be instrumental in establishing a new dining experience that showcases
indigenous-inspired cuisine and locally sourced ingredients, creating a sustainable and community-centered
culinary destination. This role involves full management of kitchen operations, including menu planning, budget
creation, staffing, and daily food preparation, while working closely with local suppliers, regional partners, and
the hotel team to integrate food and beverage services. Beyond driving profitability, the Chef will serve as an
ambassador for the organization, fostering connections within the community and positioning the restaurant as
a key player in transforming the region into a sought-after destination.
Core Responsibilities
● Develop, plan, and execute a menu that highlights Indigenous-inspired cuisine and locally sourced
ingredients.
● Ensure food quality, presentation, and consistency align with the restaurant’s vision and standards.
● Oversee all kitchen activities, including scheduling, food preparation, and service for lunch and
evening meals.
● Manage costs and budgets, including menu pricing, food costs, and staff wages, to meet financial
goals.
● Handle inventory, ordering, and supplier relationships to ensure the availability of fresh, sustainable
ingredients.
● Build partnerships with local suppliers, regional vineyards, and community organizations to source
ingredients and develop complementary offerings.
● Work with the hotel manager to coordinate bar operations and ensure cohesive food and beverage
service.
● Recruit, train, and lead a kitchen team, fostering a positive and supportive work environment.
● Provide mentorship and guidance to staff, encouraging growth and skill development.
● Collaborate with contractors and the hotel team to ensure the kitchen meets licensing and operational
requirements.
● Contribute to the design and setup of the kitchen and patio dining area, ensuring functionality and
guest comfort.
● Maintain health and safety standards, ensuring compliance with food safety regulations.
● Act as a representative for the restaurant, promoting its role in transforming the region into a culinary
and cultural destination.
● Embrace the unique challenges and opportunities of working in a remote setting, demonstrating
adaptability and resilience.
Job Requirements
● Demonstrated ability to build and maintain relationships with suppliers, community partners, and
regional stakeholders.
● Exceptional organizational and time management skills to oversee kitchen operations and meet
service goals.
● Self-motivated and adaptable, with the ability to thrive in a remote setting and work independently.
● Excellent leadership and communication skills, with experience mentoring and training kitchen staff.
● Commitment to sustainability and a carbon-neutral approach in sourcing and operations.
● Willingness to contribute to the development of a new dining experience and work collaboratively to
transform the region into a culinary destination.
Education/Experience
● Red Seal certification in culinary arts.
● 3 years proven experience in kitchen management, including menu development, budgeting, and staff
supervision.
● Knowledge of food safety regulations and experience maintaining compliance with health and
licensing standards.
● Valid driver’s license.
● Ability to pass a criminal record check.
